Garlic Scape Pesto

One of the benefits of growing your own garlic, is being able to harvest the garlic scapes that appear a few weeks before the bulb is ready to harvest. This year, we increased our garlic growing and had an abundance of scapes as a result!

Scapes can be a delicious addition to salads, stews, soups and as a pesto to be added during cooking or as a snack. If you’re a garlic lover like me, give scapes a try!

 

 

To make your pesto, you will need approximately 3 cups of chopped scapes. I chopped them into 1 inch pieces in order to fit into my food processor. Begin processing your scapes.

 

Next, once you have a coarse puree, add nuts, cheese and lemon juice and pulse.

 

Slowly add the oil while processing until pesto becomes smooth.

 

Portion into small mason jars and freeze for up to 6 months.

 

Garlic Scape Pesto

A spread for garlic lovers. Enjoy this pesto as a rub to be cooked on poultry or pork. Or mix with a bit of cream cheese and spread on crackers. It's sure to please!

Equipment

  • 1 food processor
  • 6 125ml mason jars

Ingredients
  

  • 1lb fresh garlic scapes approximately 3 cups
  • 1 cup Parmesan or Romano cheese shredded
  • 1 cup olive oil
  • 1 tbsp lemon juice
  • 1/2 cup walnuts chopped
  • Ground black pepper to taste

Instructions
 

  • Chop garlic scapes into 1 inch pieces and put into a food processor
  • Once a rough pureee, add nuts, cheese and lemon juice
  • Pulse Puree for 1 minute
  • Slowly add oil while processing 1 minute longer until smooth
  • Divide into jars or containers and freeze for up to 6 months
