Meatloaf has become a much loved meal in our home. It was always an easy, delicious meal that I could throw together when the twins were babies and that could easily be cut up as little bite sized pieces when they started on more advanced solid food.
Now, my kids know that whenever I find a sale or FlashFood deal on ground beef, that I will usually earmark a package of meat in order to make a meatloaf for my freezer. It can be made really quickly and pleases everyone’s tastebuds. Even my most pickiest eater has become a fan.
With the skyrocketing cost of food these days, I jumped at the chance to grab a couple packs of meat for the sole purpose of making a meatloaf to freeze. Being a PC Optimum member meant a club pack of lean ground beef that was on sale for $10, was only $8 for me since I’m a member. Watching for these kinds of deals definitely helps my grocery budget go a little further and allows me to make meals ahead of time, so that I don’t have the stress of cooking from scratch when meatloaf shows up on my meal plan.
Once you combine everything into a loaf pan, either cook right away to enjoy or cover tightly with foil, label when it was made and freeze until you are ready to eat. Either way it is delicious and easy to throw together, with most of the ingredients being common pantry staples.
If you are lucky enough to have meatloaf leftover, I would suggest using it up for lunch the next day by putting it on a bun or bread with a little mayonnaise and mustard and a little cheddar cheese. Delicious!
Meatloaf
Equipment
- 1 Loaf pan
Ingredients
- 2lbs Ground beef
- 2 Eggs
- 1/4 cup milk
- 1 Yellow onion chopped
- 3/4 cup Italian Bread crumb
- 1 tbsp Dry mustard
- 1 tbsp Garlic powder
- 1 tbsp Italian seasoning
- 1 tbsp Worcestershire sauce
- 1 tsp Salt
- 1 tsp Ground pepper
Topping added after 1 hour
- 2 tbsp Ketchup
Instructions
- Preheat oven to 350°
- In a large mixing bowl, combine ground beef, onion, milk, eggs and Worcestershire sauce. Mix well with a fork or spoon.
- Add bread crumb, dry mustard, garlic powder, Italian seasoning, salt and pepper and mix well by hand. Making sure to fully incorporate all ingredients.
- Scoop meatloaf mixture into a loaf pan and push down so the loaf is evenly distributed.
- Cook on 350° for 1 hour or until juices run clear.
- Drain some of the juices out of the loaf pan and spread ketchup evenly over the top of the meatloaf.
- Cook for an additional 10-15 minutes and serve.
