Banana Bread/Muffins

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground cinnamon 
  • 3/4 cup brown sugar
  • 1/2 cup butter
  • 2 large eggs
  • 3 or 4 bananas – overripe
  • 1 teaspoon vanilla extract 
  • 1/4 cup honey

Optional: 1/2 cup chopped walnuts

 

Instructions:

  1. Preheat oven to 350 degrees
  2. Line muffin pan with silicone muffin liners and spray with cooking spray
  3. Fill each muffin cup with 1 scoop of muffin batter (if using medium cookie scoop)
  4. Cool for 18-20mins or until muffins are golden brown & a toothpick comes out clean

*Tip* Keep in Tupperware at room temperature for 2-3 days or place in freezer bags and freeze up to 3 months
