Ingredients
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon ground cinnamon
- 3/4 cup brown sugar
- 1/2 cup butter
- 2 large eggs
- 3 or 4 bananas – overripe
- 1 teaspoon vanilla extract
- 1/4 cup honey
Optional: 1/2 cup chopped walnuts
Instructions:
- Preheat oven to 350 degrees
- Line muffin pan with silicone muffin liners and spray with cooking spray
- Fill each muffin cup with 1 scoop of muffin batter (if using medium cookie scoop)
- Cool for 18-20mins or until muffins are golden brown & a toothpick comes out clean
*Tip* Keep in Tupperware at room temperature for 2-3 days or place in freezer bags and freeze up to 3 months
