Taco Pie

Taco night is a very popular night in our home and more specifically, taco pie night is a huge hit. It began with using regular 10 inch tortillas and was so sought after for leftovers, that the moment I could get my hands on large 12 inch burrito tortillas, our beloved taco pie night was able to spill over to the next day for lunch leftovers. 

The process is very simple. You take a room temperature tortilla and spread a thin layer of refried bean on it, followed by cooked crumbled beef taco meat and cheddar cheese. You then repeat the process until you’re out of ingredients. In the case of the large burrito tortillas, this means I can have as many layers as there are tortillas in a pack (6)and still usually have leftover bean and cheese. Once your layers are assembled, put the taco pie into a 400 degree oven for about 15 minutes or until the top layer of cheese begins to melt and bubble. 

Cut into 12 slices with a large knife and serve with all of your favourite taco fixings! Often times for taco pie night, I will do a batch of my Mexican rice and have a basket of tortilla chips ready for dipping into the extra refried bean, yum!

Equipment

  • 1 Instant pot For preparing the refried bean
  • 1 Immersion blender For blending the beans

Ingredients
  

  • 6 12 inch Flour tortillas
  • 2 Cups Refried bean blended
  • 2 Cups Cheddar cheese Shredded
  • 2 lbs Ground beef Cooked with taco seasoning
  • 2 tbsp Taco Seasoning
  • 1/4 Cup Water

Instructions
 

  • See note and recipe below for preparing refried bean
  • Cook ground beef on medium heat until no longer pink
  • Add taco seasoning and water and mix to combine
  • Cook meat until liquid evaportates. In the meantime, shred cheese and preheat oven to 400°
  • Begin to prepare the tortillas by spreading refried bean on the bottom, followed by some of the taco meat crumble and finally some cheddar cheese.
  • Repeat this process until you are out of tortillas
  • Place taco pie on a cookie sheet lined with parchment paper and place in the oven for 15 minutes or until cheese is hot and bubbly
  • Cut into 12 even portions and serve with your favourite taco toppings
